This article explains how you can give students who need specific accommodations for assignment submissions and test time. IAIA has a Canvas add-on that allows you to set up due dates and test-taking times that vary from the rest of the class. You can set up additional time for the entire term.

Giving Extra Time for Assignments
You can set additional time to submit assignments to an individual student, or multiple students. You can also set different time extensions for different students.
Giving Extra Time for Quizzes
You can set a uniform amount of extra time quiz/test-taking for each student.
